The traditional manner of production is maintained and reveals characteristics ascribable to the milk and therefore, to the traditional handling of the sheep. It is a cured ewe’s cheese of buttery medium-soft paste, with few cavities or non at all. A rind that is thin and slightly rough, staw yellow or of a lighter colour, encloses a creamy, well knit paste of identical colour, soft and deformable when cut, capable even of spreading. Our cheese is produced in two sizes: the medium (between 400 and 600 grams) and the “cuncas” (between 800 and 900 grams).
Sepa cheese originates in a zone that comprises 12 municipalities of southern Alentejo, and is partly to the local climate, to its soils and pastures that serpa cheese owes the special features that make it a unique cheese.
